Sauteed Chicken Breasts with Leek & Artichoke Ragout
So, here's a mid-week/weeknight quickie! It's chicken - but done my way - sauteed and then topped with a leek and artichoke ragout over some quite delicious smashed potatoes! This one was a winner - although - I'm not a fan of that marinating liquid they used for bottled artichokes. Nevertheless - here are the photos and the process - there's no recipe cuz I pulled this one out of the thin air - lol - but it's easy to follow...I think.
My Beef Bourguignon
All I could think of was the way Julie (think the movie 'Julie & Julia') kept mocking Julia Child. She kept saying "boof borgonyon" and well, so did I. In my best French accent which wasn't so good. I was a Spanish studying dude - not French. Anyway, I had fun mocking last night even if it was to amuse myself.
Leftover Veggies…What Next?
I had a bunch of leftover veggies - I mean everything from leeks to squash...and I couldn't quite figure out what to do with what I had left over. It also helped that I had some leftover baked chicken breasts too. Oh...and I had puff pastry in the fridge too. See where I'm going with this? Veggies, leftover chicken, puff pastry - yes - it spells POT PIE!
Welcome to the Mediterranean!
So, here's the last recipe in this 3-day Daniel fast. It's all about the flavors of the Mediterranean - olives, tomatoes, parsley, olive oil, peppers, etc - you get the idea, right? I told you - this was no ordinary Daniel fast - if you're just joining us, check out the last three posts.
Mexican Night: Daniel Fast Approved!
Did you ever stop for a second and think that you could have Mexican food on the Daniel fast? If you haven't...then stop. Take out a pen. Write this stuff down. By the way, these recipes are COMPLETELY vegan too! Get out...I feel my heart thanking me already - although, it's probably gonna be back to fried chicken next week - lol.
Helping Haiti: Hope In The Midst of Tragedy
My church feels the pain of Haiti. In response my pastor and the other church leaders have decided that as a church we will do the Daniel fast for health and healing.

Sunday Dinner Remixed: Merlot Braised Short Ribs
Typically in my house growing up Sunday dinner was where it was at. It was the culmination of one week and the start to another. My mother or grandmother would deck the table with DELICIOUS food...and after church it was a time to eat, eat, and eat some more. You can see why I looked forward to these times.

Potato Leek Soup with Black Pepper Biscuits: What is it that makes this combination just work? I have yet to come to a conclusion. However, I can tell you one thing...this soup is THE way to go. I jazz mine up just a touch by adding white wine and bacon to the mixture.
